Lacey Lee Berry



The sounds, smells, images, and tastes of cooking interlace themselves in Lacey Lee Berry's childhood memories. Growing up around a mother and grandmother who loved to cook and for whom every-day homecooked meals included multiple vegetable dishes, homemade rolls, and miriad fresh-baked desserts with plenty of room for a pint-sized assistant at their sides, Lacey always felt at home in a kitchen.

By the time she finished high school, Lacey had two years of Restaurant Management and several cake decorating classes under her belt. After formal training at the National Culinary Institute in San Diego, the newly certified pastry chef put her creativity and skills to work at the award-winning Sycaun Casino. After two years there, she moved back home to Texas where she worked as a pastry chef at Central Market. Love brought Lacey to Utah where, for the past five years, she has found a devoted fan base for her cooking classes. She is known for her fun personality, high cooking standards, tell-it-like-it-is instruction, and ability to up anyone's cooking skills. She has sold out every children's series that she's offered, with frantic parents clamoring for more. She specializes in cheesecakes (like her Triple Chocolate with decadent white, milk, and dark chocolate layers), breadmaking, pastries and baked goods, and pressure cooking.

At the end of long days of cooking and instruction, Lacey finds herself at home testing new recipes every week and looking for that "perfect" mix that will be good enough to stamp as her own. She's happiest when she's got her husband, Todd, at her side. Together they own over 2000 DVDs to accompany the night's rich desserts.

With fall approaching, it is soup time. It has never been easier than with this pressure cooker. Check out the recipe section for some fast and easy pressure cooking meals.I have more than got my money out of this purchase. I even got my husband to start cooking with it. I can do Frozen Chicken Breast in under 12 minutes, Broccoli in 3 minutes and sweet Pork in 20 minutes! My favorite appliance in my kitchen.

Pressure Cooker Tortilla Soup

* 1/3 C Oil
* 2 Onions Diced
* 4 Cloves Garlic diced
* 1 15 oz Can Tomatoes Drained
* 3 Quarts Chicken Broth
* Tortilla Chips
* Cilantro Chopped
* 2 Limes
* Grated Cheese
* Optional - Shredded Chicken

Heat oil in cooker, then add onions and garlic cloves. Saute until deep golden brown. Remove from cooker and puree with tomatoes in blender or food processor until smooth. Return to cooker and add broth. Heat to boiling. Bring up to high pressure, reduce heat and cook 10 minutes. Release pressure and remove the lid. Add cilantro and salt to taste. Place cheese and tortilla chips in individual soup bowls and pour hot soup on top. Serve with lime wedges, if desired.
