Fondue- Swiss Cheese
- 4-6 oz White wine
- 1 Garlic Clove
- 1/2 Fresh squeezed Lemon
- 1 cup Emmentaler Swiss cheese
- 1 cup Gruyere Swiss cheese
- Fresh Ground Pepper
- Pinch of Fresh Grated Nutmeg
- 1-2 Tablespoons Cherry Flavor Brandy or Grenadine
- (red food coloring optional)
In the B/R/K double boiler heat Wine until hot then add garlic and lemon. Slowly add cheese a little at a time until melted, add more. Once it is smooth add pepper, nutmeg, and brandy. Make sure no steam escapes from the bottom. Heat should be on medium heat and will take 10-12 minute to be fully melted. Remove both pans from the heat to serve, but keep the double boiler on top. Will stay warm for at least one hour.
