Babka

- 1 1/2 cups whole milk (105)
- 2 tablespoons yeast
- 3/4 cup sugar
- 2 large eggs, slightly beaten at room temperature
- 2 large egg yolks
- 6-7 cups unbleached all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter cut in pieces, room temperature
- 1 lb semi sweet chocolate chips ( I like the mini's)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 cup butter, room temperature
- 1- Streusel Recipe
In Bosch mixer using the dough hook, place milk, yeast, sugar, eggs, and 4 cups flour into the bowl. Use the "M" switch and incorporate. Add the butter and combine. Turn mixer to speed one and add remaining flour and salt until the dough scrapes clean from the sides of the bowl. Knead for 6 minutes on speed 1. Remove dough and place in well greased container until double in size. In the Bosch Food Processor place chocolate chips and process until fine ground. About 2 minutes on high speed. Add sugar and cinnamon and mix well. Last add butter. Should be a sticky mixture. Remove and work by hand until there are no lumps. Remove dough and place on counter, Cut into three even pieces and let rest 10 minutes. Roll each one out into a rectangle. Place chocolate mixture in and roll tightly like cinnamon rolls. brush half of the roll with an egg wash and sprinkle with streusel topping. Then fold in half and twist two times. Allow to rise until double. Egg wash the tops and sprinkle with more streusel. Bake at 325 for 45-50 minutes.
