Organic Vegetable Stew


  • 5 Carrots
  • 3 Yams
  • 1 Turnip
  • 2# Winter Squash
  • 2 Leeks
  • 2 Zucchini
  • 1 Large Bok Choy
  • 6-8 C Broth
  • 2 Tbsp Coconut Oil

Wash and Cube all vegetables. Simmer all ingredients till tender. Add the Coconut Oil last.
Toppings- Avocado, Lettuce, Scallions, Ginger, Sour Cream, or Cheese.
